300 g. cucumbers, sliced
1 t. salt
1/3 c. rice vinegar (no sugar)
1/8 t. stevia
2 t. Bragg’s Liquid Aminos
1/4 t. grated fresh ginger root
Cut cucumbers into thin slices, place in bowl and sprinkle with salt. Let stand at room temperature 30 minutes or until cucumbers are softened. Drain and rinse thoroughly with water to get the entire extra salt out.
Combine vinegar, sugar, braggs, and ginger in serving bowl. Add cucumbers and combine well. Chill thoroughly before serving.
