• 3.3 ounces (150 grams) of skinless and boneless haddock fillet
• 4 large asparagus spears
• ½ a teaspoon of minced garlic
• 1 tablespoon of mixed fresh herbs, chopped (dill, parsley, thyme)
• 2 tablespoons of freshly squeezed lemon juice
• salt and pepper
Preheat the oven to 400°F. After washing the asparagus, cut off the
tough, woody ends. Place fish fillet in the center of a large piece of
foil, and arrange asparagus spears in a single layer, alongside the
fish. Sprinkle with salt, pepper, garlic and fresh herbs, and drizzle
with lemon. Wrap up the foil, seal it well add one more sheet if
necessary. Place the seal in a baking dish, and cook in the oven for
about 20 minutes. Use a toothpick, while cooking, to check if
everything is tender and soft. Best when served warm!
